Family Potluck Broccoli Salad – Veganized

I loved this old-fashioned bacon and mayo broccoli salad when I was growing up. It seemed to always make an appearance at family gatherings, and for a long time,  it was one of my own go-to recipes for potluck contributions.

It’s been years since I’ve made it because I thought of the bacon flavor and crunch as necessary components. I also wasn’t a fan of the early versions of vegan mayo that were on the market. Sadly, I had given up on ever making a vegan copy that would live up to the memories.

But now… it’s a whole new story – there are new mayo products available, along with plenty of recipes online for at-home vegan mayo.

I’m still not enthusiastic about the ingredients in some of the vegan “bacon” options I can find, so I used this quick and easy recipe for coconut bacon from CookieAndKate. It’s so good it might serve as my new miracle crunchy topping for everything I make.

I went light on the mayo – the original recipe with  “real” mayo calls for a full cup and I used barely a half cup. The original also used a 1/4 cup of sugar, and I used more of a sprinkle. I think the raisins give it plenty of sweetness, but if you want it creamier or sweeter, you can add more mayo and sugar than what I’ve listed below.

Family Potluck Broccoli Salad – Veganized

Ingredients

  • 1 medium to large head of broccoli, chopped
  • 1 small red onion, diced
  • 1 cup raisins (I used golden raisins)
  • 1/2 cup sunflower seeds
  • 1 cup coconut bacon flakes, or other vegan bacon bits of your choice
  • 1/2 cup vegan mayo, or up to a cup for a creamier salad
  • 1 tsp to 1/4 sugar, depending on sweetness level desired
  • 2 Tbs red wine vinegar

Instructions

  1. In a large bowl, mix broccoli, red onion, raisins and sunflower seeds.
  2. In a small bowl, whisk mayo, sugar and red wine vinegar until smooth.
  3. Add dressing to the broccoli mix and stir well. Chill for at least an hour or two to soften the broccoli.
  4. Top with coconut bacon bits when ready to serve.
